This two-day program on maple syrup and maple products will be held at two local maple operations. On Thursday, September16th, Cornell maple specialist Steve Childs will teach the basics of making maple syrup, including sap tree identification, tapping guidelines, collection systems, how to process sap, preserve, grade and store maple syrup. The program will be held at Catskill Mountain Maple, 65 Charlie Wood Road DeLancey, NY, 13752. The Friday, September 17, Shaver Hill Maple Farm 310 Shaver Road, Harpersfield, NY 13786, will host the session on making value-added maple products. Owners Dwayne and David Hill will demonstrate how to make maple cream and candy. Maple Specialist Steve Childs will show how to make some newer products such as maple soda and maple marshmallow, for special marketing events. Beginners and experienced maple producers are welcome.
